Ingredient Notes + Substitutions
You need these 3 ingredients to make homemade mango popsicles:

Mango
Frozen mango makes the best soft popsicle texture. If using fresh mango, I recommend cubing and freezing it ahead of time.
To freeze fresh mango, cut your mango into chunks first (roughly ½ inch cubes) and spread them on a baking pan. Then place the pan in the freezer so the chunks don't stick together.
If using a weak blender, use fresh mango cubes or partially thawed frozen mango cubes instead. The final popsicle texture is a little harder if blending mango that is not fully frozen, but the popsicles are still delicious, enjoyable, and shareable.
Maple Syrup
The syrupy texture keeps these frozen popsicles soft. Honey or agave syrup are good substitutions.
Lemon Juice
We love the brightness of just a little bit of lemon juice, and the popsicles taste extra special compared to eating plain mango. Fresh lime juice works too, or you can leave it out if you like.
Water
Coconut water is an excellent source of electrolytes and a good 1-to-1 substitution for water in this recipe. The popsicles are a little sweeter in this case, but I did not need to adjust the amount of maple syrup.
For simple flavor variations, you can replace water with apple juice, orange juice, pineapple juice, or grape juice.
For a creamy mango popsicle, use any plant-based milk or regular dairy milk in place of water. Canned coconut milk with guar gum is an excellent choice because guar gum also keeps popsicle soft, and is often used in store-bought varieties.

Mango Popsicles (3 ingredients)
Ingredients
- 1 tablespoon lemon juice (about ½ lemon)
- ¼ cup maple syrup (60 ml)
- 2 cups frozen mango chunks (275 grams)
- ½ cup water (120 ml)
Instructions
- Make the mango puree: Add all ingredients to a high speed blender. Blend on high until the mixture is smooth. It will be thick, and may require the use of a tamper if you have one. If your blender is a little weaker or you do not have a tamper, you may want to wait for the mango to thaw a little before blending.Pro Tip: Taste the puree and if needed, add a little more maple syrup and blend together. Do this until you get to your desired sweetness.
- Fill the popsicle mold: Pour the mango chunks into a popsicle mold so that each cup is filled nearly to the top. Reduce holes and bubbles by gently taping the bottom of the mold against the counter or table.
- Add sticks: Insert the popsicle sticks so there is about 1 ½ inches free to hold. Seal the popsicle mold if needed and place in the freezer overnight.
- Remove the mold: If popsicles do not slide easily from the mold, run warm water along the outside until they slide out easily. Do not pull or force the popsicles out too early or you may lose your stick. Then quickly pop them in a freezer bag and return to the freezer so the edges resolidify.

Make mango popsicles just they way you like them with these simple tips:
Taste the blended puree.
There are several variety of Mangoes and they all have a slightly different sweetness. To get the best tasting mango popsicle, taste your mango puree in step 1 before pouring it into the popsicle mold.
If it needs a little more sweetener, add 1-2 teaspoons of maple syrup at a time and blend until smooth. Then taste again until you love it!
The Best Popsicle Mold
You need only a blender and a popsicle mold to make this mango popsicles recipe. I enjoyed using this popsicle mold because the shape closely mimics store-bought brands and it comes with sticks. I was able to fool a few friends who thought they were store-bought with this shape!

Store the popsicles in an airtight container or freezer bag in the freezer for up to 6 months.
It's very common and not a problem if your popsicles stick to the mold. To loosen them, run warm water along the outside of the mold until they slide out easily.
There are three easy ways to keep homemade popsicles soft. The first is to use frozen blended fruit because it has a softer smoothie-like texture and is less dense than blending fresh fruit. The second is to use greek yogurt, which has a lighter texture. And the third is to incorporate full fat coconut milk with the additive guar gum. Guar gum is added to most store-bought popsicles because it is guaranteed to give you a soft popsicle texture.
