    This Healthy Baked Chicken Fajita recipe is done in 30 minutes with 8 main easy-to-find ingredients! It has the words 'weeknight' and 'easy' written all over it. I designed it as a Copycat Chipotle Chicken Fajita Bowl that's hands-free, thanks to the oven.

    It's beginner-friendly, has minimal prep time, and is perfect for a big batch. Toss away that sheet pan fajita recipe -- this one is juicier in a deep dish and we broil at the end to add extra texture. If you want YUM in a bowl, I'm glad to say you found it here!

    I love to make this Healthy Baked Chicken Fajitas recipe during the busy school seasons of Spring and Fall! It's easy, quick, and flavor-packed, making it weeknight-friendly. This recipe makes a great one-pan dish by itself served over rice.

    Ingredients Notes + Substitutions

    With ingredients you can find anywhere, this healthy baked chicken fajitas recipe is sure to become a family staple! It uses 8 main ingredients plus five spices you probably have on hand already.

    The 8 main ingredients and spices needed to make healthy baked chicken fajitas.
    • chicken breast - I like to use chicken breast, chipped into bite sized pieces or traditional fajita strips. You can also use chicken tenderloins. For a vegetarian option, adding cooked or canned black beans after roasting the vegetables is a great option!
    • red onion - You can use any type of onion as a substitute for red onion, but red onion will give the best, most authentic flavor. Slice the onion thinly so it cooks well and caramelizes, especially if using an alternative to red onion since yellow onions can be tougher.

    You also need a red and green bell pepper, garlic, vegetable oil, salt, dried oregano, cumin powder, and chili powder to make this recipe. If serving this recipe over rice, you'll want about 6 cups of cooked white or brown rice.

    Step-by-Step Instructions

    Follow these five easy steps to make the best healthy baked chicken fajitas recipe!

    1. Prep: Preheat the oven to 475 degrees F (245 C).
    2. Assemble: Add all main ingredients and spices to a large glass baking dish. Toss to mix thoroughly and to lightly coat the ingredients in oil.
    3. Bake: Cover the baking dish with foil or an inverted cookie sheet and bake for 20 minutes.
    4. Broil: Remove the foil or cookie sheet and switch the oven to broil for 4-5 minutes.
    5. Serve: Remove from the oven. Sprinkle fresh cilantro and squeeze lime juice to taste just before serving!

    Hint: It's really important to toss the ingredients thoroughly before baking so they are coated in oil. This keeps everything nice and juicy when you broil.

    Main Ingredients

    • 1 pound chicken breast chopped into bite sized pieces (0.5 kg)
    • 1 medium red onion thinly sliced
    • 2 green bell peppers thinly sliced
    • 1 red bell pepper thinly sliced
    • 5 cloves garlic crushed or finely minced
    • 4 tablespoons vegetable oil 60 ml

    Spices

    • ยฝ teaspoon salt

    Serving Suggestions: We love this recipe served over rice like a 'burrito bowl' or wrapped in corn tortillas. My favorite chicken fajita toppings are avocado or guacamole, cheese, and sour cream.
    Spiciness: This recipe has a medium to medium-high spiciness level with the crushed red pepper flakes. For a milder flavor, I recommend generously reducing or omitting the red pepper flakes.
    Vegetarian - leave out the chicken and add cooked or canned black beans after baking to make these baked fajitas vegetarian.

      I tone down the red pepper flakes, and omit the cilantro, since I'm one of those people who thinks it tastes like dish soap.
