Cottage Fries are the easiest of all fries, and truly an underrated snack and side! Rather than slice in wedges, cubes, or in french fry style, you simply slice in thin disks, coat with oil, roast, and season. BOOM. My favorite mostly healthy snack in 25 minutes, with less than 10 minutes fussing over prep and planning.
Growing up, a friend of mine used to make cottage fries all the time with her family. She had celiac disease (I didn't know about mine yet), and it was the easiest, fastest, tastiest way to cook a potato. 10 years later, I could not agree with her more.
For well over 10 years, I've made cottage fries at least weekly. And here I thought you were making them too! A perfect example of pluralistic ignorance -- because my friend and I make them all the time, of course everyone does.
Then I posted them on instagram, thinking it was the lamest ho-hum post ever, and received a dozen messages asking what they were. Mind blown, and yours will be too when you give these a try!

What to know before you start:
If you can put salt on a french fry, you can make this recipe.

All ingredient measurements are guidelines.
All you need are potato slices coated with oil and seasoning to taste.
Switch up the seasoning.
This is my go-to super fast seasoning combination. When I'm feeling sassy, they're amazing with ranch, cajun... really any kind of seasoning that you'd want on a potato.
Try a dip.
Most of the time, I eat these seasoned right off the pan. They're also spectacular with hummus, salsa, and any dip that tastes nice with a potato.

Description
This easy 4-ingredient Cottage Fries recipe is the perfect healthy snack or side! Rather than slice in wedges, cubes, or in french fry style, you simply slice in thin disks, coat with oil, roast, and season.
Ingredients
- 3 medium russet potatoes
- 3 tablespoons avocado or other liquid oil
- salt, pepper, and garlic powder to taste
Instructions
- Preheat the oven to 400 F. Slice the potatoes into disks. Slice thinner for crispier chip-like fries and thicker for softer cottage fries. I usually slice as thinly as I can with a regular chef's knife.
- Add oil to a large sheet pan, dividing between two pans if necessary. Use your fingers or a silicon brush to coat the bottom of each pan with oil. Lay the cottage fries down, then flip each to coat both sides with oil (alternatively you can brush each side with oil using a silicon brush).
- Roast for 10 minutes, flip potatoes, then roast 10 minutes more. Remove from oven and season to taste with salt, pepper, and garlic powder.

Avocado oil is my favorite, but any liquid oil that can handle 400 F will work too.
