    Super easy throw-together recipes are the best when living on the road, and this Creamy Avocado Pasta is a new favorite! Making gluten-free pasta is the only cooking required -- the sauce is just 6 easy-to-find ingredients thrown into a blender. Toss with spinach, a vegan protein, or chicken if you like (we use canned while traveling) and you have a 15 minute meal that’s healthy and hearty!

    Because this recipe is so simple, it’s perfect for college students in the dorm or hotel stays when you can boil pasta on a stove. If no stove is available, instant rice or quinoa made in a microwave also tastes delicious with this creamy avocado sauce.

    A blender or food processor is necessary to make this Creamy Avocado Pasta recipe, though we made an awesome copycat by smashing the sauce ingredients with a fork when I didn’t have electricity while camping. I use a 600 watt NutriBullet in our Camper Van and for travel I bring a lightweight 250 watt Magic Bullet. Both work well for this recipe, though you’re  sure to get a longer life out of the Nutribullet.

    Description

    This super easy throw-together Creamy Avocado Pasta needs few ingredients and is dairy & gluten-free! It takes 15 minutes to make this healthy meal.


    Ingredients

    Scale
    • 4 portions Gluten Free Pasta
    • ¼ cup olive oil
    • 1 medium ripe avocado
    • ½ tsp ground Thyme
    • ¼ tsp salt
    • ¼ tsp black pepper
    • 1 medium lemon, juiced
    • 2 Tbsp water (or liquid from chicken can -- optional below)
    • 4 large handfuls spinach
    • 1 10 oz can chicken, liquid poured off (optional)

    Instructions

    1. Prepare pasta according to instructions on the package.
    2. Meanwhile, add all other ingredients except chicken to a blender to make the sauce. Blend until smooth.
    3. When pasta is finished, combine pasta, sauce, spinach, and chicken. Toss to coat and serve! We enjoy this dish warm or cooled.

    Vegan proteins that pair well with this dish:

    • Green peas, swapping in lentil pasta, or a can of drained and rinsed white beans are perfect pairings with this Creamy Avocado Pasta!

    Blend all sauce ingredients in a blender or food processor. In the camper van, I use a NutriBullet.

    Add cooked gluten-free pasta, spinach, sauce, and chicken to a large pot (ideally the one you made the pasta in).

    Mix together and serve! We enjoy cracked black pepper on top for an extra kick of flavor.
